auto block ips that portscan?

If i'm running a webserver, on port 80 for example, and someone was curious and decided to try if i have a pop server running as well, or he searched for any other service that might be open, how could I auto-block his IP for like 5-10 mins?

Start by closing all unused ports in your server's firewall (25 in case of email). Install and configure denyhosts that takes care of ip# blocking.
